Apple Cinnamon Overnight Oats

A healthy, hearty oatmeal with a nuttiness from steel cut oats backed by sweet apple and a hint of cinnamon. If you prefer tart flavours, try substituting Bramley Seedling apples (Granny Smith is a tart substitute) for Spitzenburg apples. Absolutely delicious over yoghurt, fruit, or on its own. Make the night before and it keeps well in the fridge for several days.

Ingredients
  

  • 1/2 cup Steel cut oats
  • 1/2 cup Old fashioned rolled oats
  • 1 cup Homo milk Substitute milk or non-dairy beverage of choice.
  • 1 Tbsp Chia seeds
  • 1 Each Spitzenburg apple Diced into small 1/4″ cubes, skin on. Substitute Jazz or Gala apples
  • 1 Tbsp Maple syrup
  • 1 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 1/8 tsp Himalayan pink salt
  • 1/2 tsp Vanilla extract Real is best.

Instructions
 

Prepare

  • Core Spitzenburg (or substituted apple) and cut into small 1/4″ cubes

Combine

  • In a clean mason jar with fitting lid, combine all ingredients, then fit lid and shake well until combined.

Method

  • Refrigerate overnight and enjoy in the morning!
