Spiced Apple Chutney

A savoury but slightly sweet chutney that is packed with flavour! Apples, thyme, cranberries, and walnuts, provide a balance of texture and deliciousness that goes well with chicken, pork, salads, or on top of your favourite cheese...try it on toasted baguette or crostini for a decadent appetizer! Spiced Apple Chutney goes great with a light sparkling or still cider that enhances the complex spiced flavours in this dish.

Ingredients
  

  • 1 each Red onion chopped
  • 3 each Green onion chopped, including greens
  • 3 Tbsp Olive oil extra virgin
  • 2 each Garlic cloves crushed & chopped
  • 2 tsp Ginger fresh, grated
  • 3/4 cup Apple cider vinegar unfiltered
  • 3 Tbsp Maple syrup
  • 1 tsp Himalayan pink salt finely ground
  • 1 tsp Black pepper ground
  • 2 tsp Thyme leaves fresh, removed from stalk
  • 1/3 cup Thompson raisins
  • 1/3 cup Cranberries dried & sweetened (Craisins)
  • 2 Tbsp Lemon juice fresh
  • 1 tsp Lemon rind fresh, grated
  • 3 each Spitzenburg apples (large) substitute with Jazz apples if needed
  • 1/4 cup Walnuts chopped

Instructions
 

Prepare the ingredients

  • Gather all ingredients together. Cooking this dish goes quickly, so it's important to have all of your ingredients in hand and prepared. Chop the onions, garlic, and walnuts, then peel the apples and cut them into course sticks about 1 inch long: you don't have to be exact... they can be square, chunks, sticks...you just want them in bite sized pieces! Strip the thyme leaves from the stalks and measure out the rest of your ingredients.

Preheat your skillet

  • Place a heavy frying pan or skillet (cast iron works really well) over medium-high heat and add olive oil, heating until shiny but not smoking.

Cooking method

  • Add red onion and green onion and sauté until translucent, about 3 minutes, then turn heat down to medium.
  • Mix in garlic and ginger and continue to cook for 1 minute. Reduce heat to medium-low.
  • Add apple cider vinegar, maple syrup, salt, pepper, and thyme leaves. Stir to combine, then add raisins and dried cranberries. Stir well, then pat the ingredients gently down in the pan so that the raisins and cranberries are submerged in liquid. Let cook for 4-5 minutes or until cranberries are slightly soft.
  • Add lemon juice, lemon rind, apples, and walnuts. Combine well in the pan and cook until apples are slightly soft and heated through, stirring once or twice to ensure even heating (you want the apples to still be firm and not mushy), about 3-4 minutes.
  • Transfer to a bowl and let rest for 10 minutes so that the flavours combine, then enjoy with chicken or pork, in a salad, or with your favourite cheese and crostini.

Notes

Makes roughly 3 cups. 1 serving size = 1/4 cup.
